Autumn Chicken Stew

Very delicious and yummy!!!

Ingredients

  1. 4 tbspchilli flavoured olive oil
  2. 1 largeonion chopped
  3. 2Inches fresh ginger, grated or 1 teaspoon ground ginger
  4. 500 gramsPumpkin or butternut squash, peeled, remove the seeds and any fibrous bits then cut into bite-sized pieces
  5. 1 tspground cinnamon
  6. 4boneless chicken breast, chopped into bite-sized pieces
  7. 2-4 teaspoon of brown sugar
  8. 400 grams, 1 can of chickpeas
  9. 3 tbspfresh coriander, chopped
  10. 1 tspcornstarch and 3 tablespoon water for thickening the stew depending how you like it (optional)
  11. 400 grams2 cans chopped tomatoes
  12. 1Salt and pepper to taste
  13. 1I didn't use sugar nor the cornstarch to thicken
  14. My Modifications
  15. 1I used potatoes instead, same grams
  16. 1Fresh tomatoes chopped same grams
  17. 2cubes
  18. 400 gramsraw chickpeas, rinsed well and cooked for 4 hours or used the directory on the pack. Drained once cooked
  19. 1Canole oil, a bit more than the requirement
  20. 1Seasoned the chicken with salt, pepper and nutmeg

Cooking Instructions

    Heat the oil in a skillet and fry the onions for 2-3 minutes

  2. 2

    stir in the cinnamon and ground ginger if using

  3. 3

    Add in the chicken and fry until both sides are lightly brown

  4. 4

    Add tomatoes and sugar if using

  5. 5

    Season to taste with salt, pepper and cubes

  6. 6

    Add chickpeas and either pumpkins, squash or potatoes

  7. 7

    Add a bit of water if you are using potatoes

  8. 8

    Mix very well, cover and let it cook for 30 minutes

  9. 9

    Add fresh ginger if you are using half way through this process

  10. 10

    Once either pumpkins, squash or potatoes is cooked, you can thicken your stew with the cornstarch and water depending on your preferences

  11. 11

    Stir in chopped coriander just before serving
