Ingredients

6 servings
  1. 4 tbsp(1/2 stick) butter, melted
  2. 4eggs
  3. 1 tspsalt
  4. 1/2 tsppepper
  5. 1 1/2 cupwhole milk
  6. 3 tbspheavy cream
  7. 1 cupall purpose flour
  8. 1/2 cupgrated Parmigiano Reggiano cheese
  9. 1About 2 ounces cheddar cheese (I use medium or sharp), grated (1/2 cup) or cut into 12 pieces
  10. 2 tbspchopped mixed fresh herbs, such as parsley, thyme, basil, rosemary, or chives

Cooking Instructions

    Preheat the oven to 450°F.

    Brush the cups of a standard 12 cup muffin tin or popover tin with some of the melted butter.

    Divide the Parmesan evenly among the cups.

  4. 4

    Combine the eggs, salt, pepper, milk, cream and the remaining butter in a blender and blend until well combined.

    Add the flour and blend for 15 seconds, until smooth.

    Transfer the batter to a large mixing bowl.

  7. 7

    Stir in the fresh herbs.

  8. 8

    Fill each muffin cup halfway with batter.

  9. 9

    Divide the cheddar among the cups, and then top with the remaining batter.

    Bake the popovers for 15 minutes.

    Then reduce the heat to 350°F and bake for 10 minutes.

    Remove the muffin tin from the oven and unmold the popovers onto a wire rack.

    Pierce the side of each popover with a small sharp knife to allow steam to escape. (This will help keep them from deflating.)

    Serve immediately.

    *DO NOT open the oven until the popovers are finished. Leave them in until the last moment to be sure the inside is cooked.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old.
