Ingredients

  1. 1 1/2 lbground beef
  2. 2burrito size tortillas
  3. 4 tbspguacamole
  4. 1 cupsalsa
  5. 2 tbspcumin
  6. 1 tbsppaprika
  7. 1 tbspcayenne pepper
  8. 1 tbsponion powder
  9. 2 tspgarlic powder
  10. 1 cupbeef stock
  11. 1roasted bell pepper; red, yellow, or orange; cut into strips
  12. 1 cupshredded cheddar and jack cheeses
  13. 1/2 cupwhite rice
  14. 1 cupwater
  15. 1/2 cupmole sauce
  16. 1salt and pepper

  1. 1

    Heat large saute pan. Add beef. No oil. Add dried spices. Saute for approximately 10 minutes or until beef is fully browned. Drain.

  2. 2

    To roast bell peppers, toss with minimal oil and roast at 400° until skin is peeling, turning once or twice during cooking.

  3. 3

    Return beef to pan. Add stock. Cook until stock has evaporated. Add salsa. Cook until salsa is almost evaporated.

  4. 4

    Cook white rice according to package directions. Toss with mole sauce.

  5. 5

    Layer the burrito shell in this order. Guacamole, beef, rice, bell peppers, and cheese. Roll and serve!

  6. 6

    Variations; Add pinto or black bean puree or whole, salsa verde, more mole sauce, pico de gallo, roasted tomatoes, spanish rice, mexican rice pilaf, bacon.

  7. 7

    Works with steak, chicken, and pork.
