REMIX!!! it's not quite a shepherd's Pie, and not quite a turkey pot pie, it's really a little of both. Using those left overs from Thanksgiving. No need to waste or throw out perfectly good food, just get creative! 😊

Ingredients

  1. 1 1/2 cupcooked chopped turkey(dark or white,or both)*I used dark*
  2. 2Carrots, chopped
  3. 2celery stalks,chopped
  4. 1 cupmushrooms, quartered
  5. 1/2 cupcorn
  6. 1onion, chopped
  7. 2 clovegarlic, minced
  8. 2 cupmashed potatoes
  9. 1 cupturkey stuffing
  10. 1/3 cupchicken stock
  11. 1/4 cupmilk
  12. 1/2 tbspcornstarch
  13. 1/2 tbspolive oil, extra virgin
  14. 1 1/2 tspdried thyme
  15. salt and pepper
  16. butter

Cooking Instructions

    In a bowl, mix your mashed potatoes and stuffing, set aside.

    In a large pan, heat oil and sauté onions and garlic until translucent

  3. 3

    Add all your veggies, and cook for about 5-8 min.

  4. 4

    Add your chopped turkey, and season with thyme, salt and pepper.

  5. 5

    Add your chicken stock. Make an empty space in the center of the pan and add your cornstarch and milk. Mix until the cornstarch has dissolved, then mix everything together.

    Cook for another 3-5 min until the sauce thickens.

    Transfer everything to a baking dish. Top with your mashed potato/stuffing mixture.

    Add a few dollops/dabs of butter to the top and bake in oven for 35min @ 400°F.

    After 35 min, set under the broiler on high for 5min to crisp up and brown the top nicely.
