Nerikiri-Wagashi like sweet "Gazania" made from chestnut puree

This recipe is for a Nerikiri Wagashi like sweet which is made from chestnut puree and plain flour (I used a French chestnut puree). First, make dough with chestnut puree and plain flour and then make flower shaped sweets with it in the same way to make Nerikiri Wagashi. This dough is dark brown and it's difficult to colorize it. So I made dark colored gazania like Wagashi.

[Make chestnut-dough] Ingredients

Mix 100g of chestnut puree and 50-60g of sugar. Wrap it with a paper towel.

Wring it and wrap it with a fresh paper towel again to its liquid off. Weigh the chestnut puree mixture after draining off its water. Add its 5% weight of plain flour as sifting it.

Mix them. Wrap it with a bleached cotton cloth. Put it into a steamer. Steam it for 15min.

Knead the dough to make it smooth with the cloth.Wrap it with a plastic wrap and cool it down. Leave it in a refrigerator for 30min.

Divide a dough into parts and colorize them.
