Quarter tomatoes. Place in heated, and oiled, stock pot. Cover. Let simmer for twenty minutes.

Strain tomatoes. Place into blender.

Add spices, basil, and garlic.

Optional: add mushrooms and red onion.

Blend.

Place the sauce back into the stock pot. Cover. Let simmer until sauce gets thickened. About ten minutes.
