Gently mix (do not beat) the raw eggs so they combine without creating foam. Add the salt or MSG and the seasoning.

Pour the eggs onto a hot griddle or skillet at 325°F (medium heat), spreading them thin like a crepe. In a separate pan, lightly brown the turkey ham until fragrant, but do not toast.

Place the ham slices on the egg once it has set, then add two slices of mozzarella cheese on top. Fold the omelet twice, add the remaining two slices of cheese, then fold again to seal.

Serve, sprinkling a pinch of cayenne pepper on top. Enjoy alone or with a little diet tomato sauce.
