Insects won't touch the tomatoes, they only go on sweet food, don't worry :)
If you live in a humid region, the tomatoes will take a very long time to dry, so only do this in the summer.
I eat this on bread, in salads, with pasta dishes etc

Halve cherry tomatoes and put them on a wooden cutting board lined with parchment paper. Add salt (it draws moisture out of the tomatoes)

Set tomatoes on your balcony in the sun. My tomatoes took 3 days to dry, it's 40°C outside. They should be dry but not crispy, you're looking for the texture of a dried apricot. If the tomatoes are too dry, they won't taste good and if they are too watery, they will spoil quickly in the jar, so check regularly on them

Once dry, put tomatoes in a sterilized jar, submerge in good quality olive oil. You can add spices as well, I added fresh rosemary and a whole clove of garlic
