Was just looking for a different way to serve pork chops, thought I would give this a shot. Will do this again.
Steps

Heat oil in med-high pan

Season pork chops with salt and pepper to taste

Saute chops until cooked through, turning as required. Anywhere from 2-6 minutes a side depending on thickness

Slice onion and mushrooms while chops cook
- 5
Remove cooked chops and set aside. Cover with foil and let rest while you finish the sauce.

Reduce pan to medium heat, Melt butter in pan, add onions, saute until tender, about 5 minutes

Add mushrooms, continue cooking until tender, about 5 minutes

Add tomato paste, flour, paprika, dried dill, and salt and pepper to taste

Stir into mushroom/onion mix, tomato paste, flour, dill, paprika, about 15 seconds

Add stock and deglaze pan

Simmer until sauce thickens

Remove from heat, stir in sour cream and fresh dill (if using)
