Wanted to try somethin with some tenderloins I had in my freezer and just kinda threw this all together and I will never make tenderloins another way again!! So very good!! And is it ever JUICY!!!!

Garlic & Lemon Roasted Pork Loin

Wanted to try somethin with some tenderloins I had in my freezer and just kinda threw this all together and I will never make tenderloins another way again!! So very good!! And is it ever JUICY!!!!

Ingredients

  1. Marinade
  2. 5 cloveof garlic, chopped
  3. 1zest of one lemon
  4. 1juice of one lemon
  5. 1/4 tspcayenne pepper
  6. 2 tbsporegano
  7. 1/2 cupolive oil
  8. 1salt and pepper (use your own preference)
  9. 2 lbpork tenderloin

Cooking Instructions

    In a blender or food processor blend all ingredients for your marinade just until smooth. Place pork tenderloin in a 9x13 glass baking dish and cover with marinade, turning over to make sure its all coated well. Cover with saran wrap and put into refrigerator for at least an hour. The longer it marinades the better!

    Preheat oven to 375°F.

    Bake for roughly an hour and a half. Once done cover with foil and let rest about 10 minutes without cutting into meat. You don't want to lose all those yummy juices!!!

    Slice it up and enjoy! You can also make a gravy to pour over by using your pan juices mixed with some chicken broth (or whatever broth you have) with about a tablespoon or two of flour, whisking til smooth and thickened.
