What do you do when you want a tasty soup, but are short on time and ingredients? Why, raid the pantry and leftovers of course! I wasn't sure what to make for dinner and suddenly thought soup sounded really good, but wasn't sure what I had on hand. So I went pantry shopping and voila, might as well be instant! So delicious!

Ingredients

  1. 2 tspunsalted butter
  2. 1/2 smallonion - chopped
  3. 1 pinchdried thyme
  4. 1 pinchcelery seed
  5. 2 cupleftover cooked chicken - torn into chunks (I used half a leftover rotisserie chicken lol)
  6. 3/4 cupfrozen mixed veggies
  7. 1 cangolden mushroom soup
  8. 2 1/2 cuplow sodium chicken broth
  9. 1 cupwater
  10. 1/4 tsppoultry seasoning (optional, I liked the extra flavor it added)
  11. 1/3 cupuncooked long grain rice (not instant)
  12. 1salt and pepper to taste

Cooking Instructions

  1. 1

Melt the butter in a medium sauce pan over medium heat. Add onion, sprinkle with a pinch of salt and cook til just barely translucent stirring occasionally, about 3 minutes. Add thyme and celery seed and cook another 1 minute, stirring constantly.

  2. 2

Add chunks of chicken, soup, chicken broth, water, veggies and poultry seasoning (if using). Stir to combine. Taste and adjust salt and pepper as desired.

  3. 3

Turn heat up to medium high. Bring to a boil stirring occasionally. When soup begins to boil immediately add uncooked rice, cover and turn heat down to medium low. Simmer for 20 minutes or until rice is tender, stirring only twice, keeping the lid on otherwise. When done taste again and adjust seasoning if necessary.

  4. 4

Serve and enjoy on its own, with crusty bread or even a delicious grilled cheese, like the one attached below. ;)

Cooking is a hobby and a passion of mine. I love cooking and trying new and different things. The best thing about cooking? I get to prepare delicious food for my family and friends that they (almost) always love! Lol.Many of my recipes are experiments in what I could make with what was available at the time. Many are simply my version of classic and/or popular dishes. A few are variations of recipes I have found elsewhere online but adjusted to our tastes. No matter what, though, each of my recipes is tried and tested before posting and I hope you find as much joy in preparing them as I do.
