Ingredients

  1. 13lb spaghetti squash
  2. 4roma tomatoes
  3. 2cucumbers
  4. 1/2of a onion
  5. 1 1/2 cupolives (I prefer Kalamata olives for this)
  6. 1 cupfeta cheese
  7. 1/2 cupparmesan cheese
  8. salt and granulated garlic
  9. 1/2 cupred wine vinegar
  10. 1optional - pine nuts

Cooking Instructions

    Cook squash in microwave on high for 15-20 minutes with punctured holes in it. Let rest 15-20 minutes or until just cool enough to handle. Cut in half and remove seed section. Scrape out flesh with a fork.

    Chop tomatoes.

    Chop the cucumbers.

    Dice the onion.

  5. 5

    Cut the olives in half.

  6. 6

    Combine the vegetables.

  7. 7

    Add the cheese and seasonings.

  8. 8

    Pour in the red wine vinegar and stir.
