Ingredients

  1. 2 cupgluten-free baking mix
  2. 1 1/3 cupsoy milk (or milk of your choice)
  3. 2eggs
  4. 1 cupmini pepperoni (or regular pepperoni slices cut in quarters)
  5. 2 cupmozzarella cheese, divided
  6. 1 tsporegano
  7. 1/2 tspbasil
  8. 1/2 tspgarlic powder
  9. 1 1/2 cupPizza sauce
  10. 4 ozcanned mushrooms, drained

    Heat oven to 375°F. Grease rectangular baking dish.

  2. 2

    Mix baking mix, milk, & eggs until batter is uniform in color (batter will be lumpy). Stir in pepperoni, 1 cup cheese, oregano, basil, & garlic powder. Could add onions & Green pepper if you like. Spread evenly in baking dish. Bake until top is light brown, about 30 minutes.

    Spread pizza sauce on top. Then sprinkle with mushrooms & remaining 1 cup of cheese. Bake just until cheese is melted, about 2-4 minutes.
