Ingredients

4 servings
  1. 2boneless, skinless chicken breasts
  2. 2bell peppers, any color
  3. 8 ozbutton mushrooms
  4. 2 smallonion
  5. 1/2 cupolive oil, extra virgin
  6. 3 tbspworcestershire sauce
  7. 1juice from one lime
  8. 1 tbspground cumin
  9. 1 tbspMexican oregano
  10. 1 tbspchili powder
  11. 1/2 tspred pepper flakes
  12. 1 tbspgarlic, minced
  13. 1 tspsalt
  14. 1/2 tspground black pepper
  15. 1 tbspsugar
  16. 2 tbspchopped cilantro

Steps

  1. 1

    Cut your chicken into pieces big enough to skewer. Do the same with your veggies. Leave the mushrooms whole. Now thread them onto skewers, alternating them.

  2. 2

    Mix the rest of the ingredients for your marinade. Pour over your skewers of chicken and veggies in a pan big enough to lay the skewers flat. Cover and marinade overnight in the refrigerator, occasionally turning.

  3. 3

    Heat your grill medium hot. Grill the kabobs, turning frequently and brushing the leftover marinade over them. Cook until chicken is cooked through. Serve on a rice pilaf or in warm tortillas.
