10 servings
  1. 1 kgmascarpone
  2. 120 gyolk eggs
  3. 12 spoonsugar
  4. 50 mlred martini
  5. 500 gsponge fingers
  6. 100 gcocoa powder
  7. 300 mlespresso coffe

Steps

    Beat the egg yolks with sugar and martini until it becomes smooth and soft

  2. 2

    Add the mascarpone cheese inside a bowl where before was beat the until the composte look creamy and smooth

  3. 3

    Prepare espresso coffee

  4. 4

    Wet the sponge finger in the coffee but not for longer o risk can it become soggy

  5. 5

    Proceed with alternate in layers the sponge fingers with mascarpone cheese

  6. 6

    Finish with cocoa powder

Pierangelo Prestigiacomo was born of Sicilian parents, Anna and Leoluca, in 1984. Life was good, in Sicily’s sunnyclimate. As the years progressed, Pierangelo realised he had a love of food and cooking. Encouraged by Mum andDad, he created dishes of cuisine. The cooking and knowledge of that cuisine became a passion – a desire to drivefurther, into a wonderful world. Later in life he completed 3 internships, working at hotels and restaurants, in severalvarious chefs’ positions. Pierangelo is passionate about creating cuisine for enjoyment, to be savoured andappreciated, lingering on the exceptional tastes and flavours, always.In 2013 Pierangelo came to the UK and gained further experiences in restaurants, including the Sapori Restaurant.Furthering his career, he welcomed the opportunity to be a chef at the Vivo Restaurant. Co-proprietor and GeneralManager is Massimo, who came to the UK during 1998 and in due course established high-quality, authentic Italiancuisine, at very affordable prices, in an Italian-inspired ambience, catering for all dietary requirements.Pierangelo has an extensive knowledge of cuisine. Also, he has great skills for creating sculptures on fruits andvegetables, as well as very impressive cake decorating abilities. He has strong opinions and beliefs about theimportance of assisting sourcing and maintaining sustainability.
