It took me a while to get this recipe to my complete liking but I finally did. Always a hit with my family. Ask the kids to help!
Cooking Instructions

Preheat your oven to 350 degrees. Cook pasta as per package instructions.

Trim the fat from the chicken breasts, then place them in a freezer bag and beat them with a meat mallet until they're thinned out, (can also be done with a spatula or pasta server if you don't have a mallet). Remove them from the bag and cut them in half.

In a 13x5 glass baking dish, spray with cooking spray and then add enough pasta sauce to cover the bottom.

Get your breading ready. Crack eggs into a bowl, spread flour on one plate and bread crumbs on another. Heat the olive oil and butter in a large skillet on medium-high.

Coat each piece of chicken in this order: flour, egg, bread crumbs. Sprinkle all the seasonings on each side before adding to the skillet and lightly frying to a golden brown.

Add the chicken to the baking dish.

Pour more sauce on top of the chicken, as much or as little as you desire.

Sprinkle the shredded mozzarella on the chicken. Slice the fresh mozzarella and put one or two slices on top of each breast. Lastly, add the shredded parmesan on top to complete the process. (You can never have too much cheese!)

Cover with foil and bake at 350 degrees for 20-30 minutes.

Serve over the prepared noodles with a side salad and garlic toast. Enjoy!!

This is our take on chicken parmesan. It's not a classic, traditional recipe but it is delicious! We enjoy a combination of alfredo and marinara sauce for our recipe. The overall process is a little time consuming and involved...it takes a lot of multi-tasking...but it is so darn good. We usually save it for a weekend night when we have more time in the evenings. You may also have some marinara leftover (we usually do), but it can be refrigerated for another recipe in the next few days or it can be frozen. Christina -

I had these huge chicken breasts to cook but I find the big ones tend to be tough even after brining sooo....I split the whole breast then butterflied them. Still HUGE so I cut them through and beat the crap out of them. Easy but a little time consuming. In the end, perfectly fork tender though. I literally had to dig for ingredients.
