Ingredients

  1. 2boneless, skinless chicken breasts
  2. 2 cupsbread crumbs (I use Panko)
  3. 2 cupsall purpose flour
  4. To taste Italian seasoning
  5. To taste onion powder
  6. To taste garlic powder
  7. To taste salt
  8. To taste pepper
  9. 2eggs
  10. 1/4 cupolive oil
  11. 1 tbspunsalted butter
  12. 1log fresh mozzarella
  13. 1 cupshredded parmesan
  14. 1 cupshredded mozzarella
  15. 1 jarpasta sauce of your choosing
  16. Halfa package pasta of your choosing
  17. Olive oil cooking spray

Cooking Instructions

    Preheat your oven to 350 degrees. Cook pasta as per package instructions.

    Trim the fat from the chicken breasts, then place them in a freezer bag and beat them with a meat mallet until they're thinned out, (can also be done with a spatula or pasta server if you don't have a mallet). Remove them from the bag and cut them in half.

    In a 13x5 glass baking dish, spray with cooking spray and then add enough pasta sauce to cover the bottom.

    Get your breading ready. Crack eggs into a bowl, spread flour on one plate and bread crumbs on another. Heat the olive oil and butter in a large skillet on medium-high.

    Coat each piece of chicken in this order: flour, egg, bread crumbs. Sprinkle all the seasonings on each side before adding to the skillet and lightly frying to a golden brown.

    Add the chicken to the baking dish.

    Pour more sauce on top of the chicken, as much or as little as you desire.

    Sprinkle the shredded mozzarella on the chicken. Slice the fresh mozzarella and put one or two slices on top of each breast. Lastly, add the shredded parmesan on top to complete the process. (You can never have too much cheese!)

    Cover with foil and bake at 350 degrees for 20-30 minutes.

    Serve over the prepared noodles with a side salad and garlic toast. Enjoy!!
