It took me a while to get this recipe to my complete liking but I finally did. Always a hit with my family. Ask the kids to help!

Preheat your oven to 350 degrees. Cook pasta as per package instructions.

Trim the fat from the chicken breasts, then place them in a freezer bag and beat them with a meat mallet until they're thinned out, (can also be done with a spatula or pasta server if you don't have a mallet). Remove them from the bag and cut them in half.

In a 13x5 glass baking dish, spray with cooking spray and then add enough pasta sauce to cover the bottom.

Get your breading ready. Crack eggs into a bowl, spread flour on one plate and bread crumbs on another. Heat the olive oil and butter in a large skillet on medium heat.

Sprinkle both sides of the chicken with all the seasonings then bread each piece in this order: flour, egg, bread crumbs. Add chicken to the skillet and lightly fry about 3-4 minutes on each side, to a golden brown.

Add the chicken to the baking dish.

Pour more sauce on top of the chicken, as much or as little as you desire.

Sprinkle the shredded mozzarella on the chicken. Slice the fresh mozzarella and put one or two slices on top of each breast. Lastly, add the shredded parmesan on top to complete the process. (You can never have too much cheese!)

Cover with foil and bake at 350 degrees for 25-30 minutes.

Serve over the prepared noodles with a side salad and garlic toast. Enjoy!!
