A cake tester is a fine gauge wore with a handle on it. It was designed to be inserted into baked goods to check fore doneness. It can also be used for meat.

When your protein is in the realm of 'I think it's done', press your cake tester into it's widest point, the part that should take the longest to cook.

Leave the tester for a moment. Remove and hold the wire to your inner wrist. If it's hot, you're ready to plate.

This method can be more accurate than the old finger poke, but it does take some learning. It can be applied any time you wanna make sure something is heated through..
