I took advantage of the beautiful vegetables on sale right now in our local grocery store to throw together a different dish to elevate the usual couscous side dish. Loved it!

Ingredients

  1. 1 packagesNear East brand roasted red pepper couscous
  2. 5button mushrooms, chopped
  3. 1/2orange bell pepper, chopped
  4. 1/4 cuppurple onion, chopped
  5. 1medium-sized zucchini, chopped
  6. 1 tbspminced garlic
  7. 2 tbspolive oil
  8. 3roasted hatch chile peppers, deskinned, deseeded and chopped
  9. 3 tbspfresh cilantro, chopped
  10. 3/4 cupchick peas
  11. 1/2 cupshredded cheese
  12. 1/2 tspgarlic salt
  13. 1/2 tspmarjoram

Cooking Instructions

    Preheat oven to 350°F.

    Cook couscous according to package directions. Let sit for 5 minutes covered then fluff with a fork. Transfer to a large mixing bowl. Set aside.

    In a large skillet, saute veggies and garlic over medium high heat with olive oil until tender yet still crisp about 5-6 minutes.

    Once veggies are cooked transfer them to the same mixing bowl of the couscous along with the cooked chopped chicken.

    Add roasted, deseeded, deskinned and chopped peppers to couscous mixture.

    Add chopped cilantro and chick peas. Mix until well combined and transfer into an oven proof baking dish.

    Cover couscous bake with shredded cheddar cheese and bake for 30 minutes uncovered.

    Let cool, serve and garnish with extra cheese if desired and fresh cilantro leaves.

I cook a lot with fresh vegetables and fruits but my first love is fresh herbs! I garden a lot and love to cook what I grow.
