Ingredients

  1. cookies
  2. 2 cupall-purpose flour
  3. 1/2 tspbaking soda
  4. 1/4 tspsalt
  5. 1 1/2 tspground cinnamon
  6. 2 tspground ginger
  7. 1/4 tspground cloves
  8. 3/4 cupunsalted butter
  9. 1/2 cupgranulated sugar
  10. 1/4 cuplight bown sugar, packed
  11. 1/4 cupunsulphured molasses
  12. 1large egg
  13. 1 tspvanilla extract
  14. 3/4 cupraisins, optional. Using them ensures a wonderfully chewy cookie
  15. sugar roll garnish
  16. 3/4 cupgranulated sugar or decorative sugar for rolling cookie dough balls. I used gltter white decorative sugar

Steps

    Preheat the oven to 350. Line baking sheets with parchment paper

  2. 2

    In a small bowl whisk flour, baking soda, salt,cinnamon,ginger and cloves.

    In a large bowl beat butter with both sugars until light and fluffy, 2 to 3 minutes

    Add egg and vanilla and molasses and beat in

    Add four mixture to butter mixture and mix just until blended.Mjx in raisins

    Chill dough 30 to 60 minutes.

    Have garnish/rolling sugar spread out on a plate.

    Roll batter into 1 inch balls, place in garnishing sugar.

    Roll.in sugar to cover dough balls

    Place on prepared pans 2 inches apart. Bake 10 to 12 minutes for chewy centers with crispy edges. Bake 14 minutes for a crisp cookie

    Cool on pans 2 minutes then transfer to wire racks to cool completely

    NOTE; I listed the raisins as optional BUT for a wonderful chewy cookie that has a crisp edge please add them.and cook.for the shorter time.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
