Ingredients

  1. 1.1 lbsboneless, skinless chicken breast or thighs, sliced into strips (about 500 grams)
  2. 1 containerplain yogurt
  3. 1/4 cupmilk (60 ml)
  4. Shawarma spice mix
  5. Salt, black pepper, cayenne pepper, paprika
  6. Garlic powder and onion powder
  7. Pinchground cardamom and pinch of cinnamon
  8. 1lemon
  9. Vinegar
  10. 1small clove garlic, 1 small onion, 1 small tomato, and 1 small green bell pepper, all finely chopped
  11. 1 tablespoonketchup or tomato paste
  12. 1 tablespoonbutter or oil
  13. Charcoal for smoking flavor
  14. 1potato
  15. For the toum (garlic sauce):
  16. 1/2 containerplain yogurt
  17. 1 clovegarlic, minced
  18. 1/4 cupoil (60 ml)
  19. Pinchsalt
  20. Juice of 1/2 lemon
  21. Lebanese or Syrian flatbread for the sandwiches

Steps

    In a bowl, mix the spices, yogurt, milk, lemon juice, a splash of vinegar, and ketchup. Add the chopped garlic, onion, tomato, and green bell pepper, and mix well. Add the chicken strips and stir to coat. Let the chicken marinate for at least 4–5 hours so it absorbs the flavors.

    To cook, heat a nonstick skillet over medium-high heat. Add a small amount of butter or oil. Add a portion of the chicken (about a ladleful) without any excess marinade liquid. Cook in batches so the chicken sears and doesn’t steam. Stir and cook until browned, then remove from the pan. Wipe the pan clean with a paper towel between batches and repeat until all the chicken is cooked.

    Place the cooked chicken in a baking dish and bake in the oven for 5 minutes. Meanwhile, light a piece of charcoal. Remove the dish from the oven, place a small piece of foil in the dish, put the hot charcoal on the foil, drizzle a drop of oil over the charcoal, and cover the dish tightly for 10 minutes to infuse a smoky flavor.

    For the toum: Peel and dice the potato, then boil until tender. In a blender, combine the oil, yogurt, garlic, salt, lemon juice, and the mashed potato. Blend until smooth and creamy. The sauce is now ready.

    To assemble the sandwiches: Spread some toum on the flatbread, add the chicken shawarma, and roll up the sandwich. Toast the rolled sandwich in a nonstick skillet with a little oil until golden brown on all sides. Enjoy!

انا من عشاق الطبخ بانواعه هوايتي اني اجرب اكلات مختلفه وجديده من اي بلد في العالم طورت نفسي بنفسي بشوف الطبخ حاجه حلوه اوي فكرة إنك تبذل مجهود وتركز في مقادير وتوقيتات عشان تسعد عيلتك فكرة حلوه جدًا وفكرة إنك تحوّل شوية روايح ونكهات مختلفة لحاجة واحدة حلوة ومتناسقه ومفيدة فكرة عبقرية حاجة بتخليك فخور بنفسك بجد حتى لو الأكل اللي وقفت في المطبخ ساعتين عشان تعمله هيتاكل في عشر دقايق ده مش مجهود ضايع إطلاقًا بالعكس ده سحر مؤثر جدًا وتعبير عن الحب.... بجرب كل حاجه جديده امنية حياتي ان يكون ليا برنامج طبخ واقدم الوصفات اللي بحبها مبسوطه اني انضممت لكوكباد واتمني احقق حلمي من هنا 🙌😍 ونصحيتي دائما ليكو جربو كل جديد التجديد اهم حاجه ^^
