Peel and chop potatoes into quartets. Cook covered in a small amount of boiling water for 20 minutes or until tender then drain.

Add cream cream gradually, soo potatoes aren't too runny

Put half the potatoes into a mixing bowl using a paddle attachment, beat potatoes on high speed until smooth and has no lumps, 1-2 minutes stopping mixer to scrape sides and bottom. SLOWLY add cream and butter with mixer on LOW.
