Ingredients

  • 1Mixed olives, kalamata, spanish olives etc
  • 1small jar chopped pimentos, or roasted peppers
  • 2 tspeach lemon & orange zest
  • 2garlic cloves, minced
  • 1/2 cupolive oil
  • 1/2 cupbalsamic vinegar
  • 1 tbspchopped fresh flat leaf parsley
  • 1 tbspfresh basil, choped
  • 1/2 blockmozzarella cheese cut into bite size cubes

Steps

  1. 1

    In a small bowl add olive oil, balsamic vinegar, garlic & fresh herbs. In a separate bowl add olives & pimentos and cheese, pour marinade over olives, stir refrigerate overnite. Enjoy!!
