  • 2 kgfresh tripe, self cleaned and cut into bite sized pieces
  • 4 cupsboiling water
  • 2 tablespoonsalt
  • 2 tablespoonpepper

Steps

    Start by soaking your tripe then rinsing thoroughly under running water

  2. 2

    Cook tripe in boiling salted water until soft.

  3. 3

    Season with black pepper.

  4. 4

    Serve with pap, samp or bread.

  5. 5

    Tip: The longer tripe cooks the better, allowing the meat to become tender.
