Gently combine the first 5 ingredients in a bowl and chill in the refrigerator for at least 1/2 an hour.

Fold crêpes into triangles and top with berry mixture.

If desired, top crêpes with a little whipped cream or vanilla ice cream.

I love these with vanilla yogurt and peaches inside. But they're equally delicious with syrup, or cinnamon & sugar, or almost anything else you can conceive of!Also amazing as savoury crèpes for dinner, but you'll want to leave the sugar and vanilla out then, and maybe throw some herbs in instead, depending on what your intend to have as fillings.Loonieburger

At first I was adding sugar and butter to my crepes (as in the basic recipe), but at some point I realized they tasted fine without it, so I omitted it. Now I make my crepes with or without butter depending on the toppings I'm using (I do not add any sugar).When I'm using whipped cream or fruit as toppings, I cook these simple, light-colored sugar crepes until lightly golden brown. I wanted to make a crepe that was delicious and easy to cut into with your fork even after time had elapsed.It's smooth, cooks easily, and can be made thinly so it looks great when layered.In order to bring out a richness I mixed in a little custard with the cream.Mille crêpes dough can be baked very thinly. Bake on high-medium heat. If you bake on low heat the moisture will jump out and you end up with dried-out dough. Add a little bit of baking powder for a crispy and fluffy dough. A big Sunday morning breakfast is a tradition in our house and so today we went with crepes to eat with some fancy types of honey that the girlfriend got as a gift. Prone to overdoing things as I am, we wound up with DIY "crepe station" complete with caramelized apples, Nutella, sea salt, raisins, and who knows what else.
