Ingredients

  1. 1 lbboneless skinless chicken breast, butterflied
  2. 1 packagesshredded pepper jack cheese
  3. 1 packagesfrozen spinach, thawed & drained
  4. 2 cupitalian bread crumbs
  5. 3 tbspolive oil
  6. 1 tspground black pepper
  7. 1 tspseason salt
  8. 16toothpicks or twine

  1. 1

    After chicken is butterflied, pound out about 1/4 inch thick.

  2. 2

    Preheat oven 375 °. Mix spinach, and cheese.

  3. 3

    Stuff 1/4 of spinach mixture in each chicken, foldover & use 4 toothpicks for each breast to secure close.

  4. 4

    Rub on olive oil. Sprinkle all seasonings, & then roll in bread crumbs.

  5. 5

    Place in 13x9in pan & bake for 35 minutes or until done. Serve with salad or veggies.
