Ingredients

  • 2/3 cupbutter, softened
  • 1 1/4 cupsugar
  • 2eggs
  • 4egg whites
  • 1 1/2 tspfresh lemon juice
  • 3/4 tspalmond extract
  • 3 cupflour
  • 3 3/4 tspbaking powder
  • 1/2 tspsalt
  • 1 1/2 cupmilk
  • 2 cupfresh or frozen blueberries (not thawed)
  • 1 cupcrushed pineapple, well drained
  • 3/4 cupchopped pecans, optional

Steps

  1. 1

    Preheat oven to 350°. Spray 2 loaf pans with nonstick cooking spray.

  2. 2

    Cream butter and sugar. Add eggs, egg whites, lemon juice, and almond extract.

  3. 3

    Mix together flour, baking powder, and salt. Add to butter mixture, alternating with milk.

  4. 4

    Fold in blueberries, pineapple, and nuts, if using.

  5. 5

    Spread batter into prepared loaf pans and bake approximately 60 minutes, or until a toothpick inserted near center comes out clean.
