Ingredients

20 mins
4 servings
  • 3Zucchini (spiral sliced)
  • 3yellow squash (spiral sliced)
  • 3 tbspprepared pesto
  • 2 tbspolive oil
  • 1 cupsun dried tomato halves
  • 1/2 cupshredded asiago cheese
  • 1salt and pepper to taste

Steps

20 mins
  1. 1

    Heat olive oil and pesto in large pan over med heat

  2. 2

    Add tomatoes

  3. 3

    Add zucchini and squash and season with salt and pepper

  4. 4

    Cook until "pasta" is to desired softness (I do about 10 minutes)

  5. 5

    Sprinkle with cheese and enjoy!
