I recently received a spiralizer and I'm loving it! This was one of the first quick meals we came up with. The whole family loves it!

Ingredients

20 mins

4 servings

3Zucchini (spiral sliced)
3yellow squash (spiral sliced)
3 tbspprepared pesto
2 tbspolive oil
1 cupsun dried tomato halves
1/2 cupshredded asiago cheese
1salt and pepper to taste

Heat olive oil and pesto in large pan over med heat

Add tomatoes

Add zucchini and squash and season with salt and pepper
4

Cook until "pasta" is to desired softness (I do about 10 minutes)

Sprinkle with cheese and enjoy!
