Ingredients

  1. 18 oz box manicotti noodles
  2. 115 oz container ricotta cheese
  3. 2 cupshredded mozzarella or italian blend cheese
  4. 1/2 cupgrated parmesan cheese
  5. 1egg
  6. 4 cupchili - more or a bit less would be fine
  7. 2 cupshredded cheddar cheese

Steps

  1. 1

    Preheat oven to 350°F and follow the directions on the box to prepare the manicotti noodles

  2. 2

    Combine ricotta, mozzarella, parmesan, and egg.

  3. 3

    Layer 2 cups chili on the bottom of a 9x13 pan (I sprayed mine with cooking spray first)

  4. 4

    Stuff manicotti noodles with ricotta cheese mix and place in pan on top of the chili layer

  5. 5

    Top the stuffed manicotti noodles with remaining 2 or 3 cups of chili

  6. 6

    Place tin foil on top of the pan and bake at 350°F for 30 minutes

  7. 7

    Remove pan. Remove tin foil. Top the manicotti with cheddar. Bake uncovered for another 10-15 minutes.
