Ingredients

  1. 1 lbbox of orzo pasta
  2. 2red bell peppers, seeded and diced small
  3. 3/4 cupkalamatta olives, pitted
  4. 6green onions, thin slice
  5. 6 ozcrumbled feta cheese
  6. 1/4 cupextra virgin olive oil
  7. 1/4 cupred wine viegar
  8. 1 tspsalt
  9. 1 tspground pepper
  10. 3 clovegarlic, minced
  11. 1/4 cupchopped fresh parsley
  12. 1/2 tspred pepper flakes(optional)
  13. 1anchiove fillet (optional) finely chopped

Steps

20 mins
  1. 1

    In large pot of salted boiling water, cook orzo for 8-10 minutes or until desired doneness. Drain.

  2. 2

    In another bowl mix garlic, salt and pepper,anchiove and pepper flakes if using, oil and vinegar. Set aside.

  3. 3

    Into pasta add peppers, onion, olives, and feta. Toss in oil and vinegar mixture. Toss well and add parsley last.

  4. 4

    Can serve warm or refrigerate one hour before serving.

  5. 5

    This is delicious served along side of grilled meats.

  6. 6
