Ingredients

  1. 1FOR PIZZA BASE
  2. 1 lbground chicken
  3. 1 largeegg, beaten
  4. 2 tbspsour cream
  5. 1/4 cupgrated parmesan cheese
  6. 1/4 cupshredded fontina cheese
  7. 1/2 tspitalian seasoning spice blend
  8. 1 tsphot sauce, such as franks brand
  9. 1/4 tspblack pepper and salt to taste
  10. 1 smallonion, minced
  11. 1 cloveof garlic, minced
  12. 1 tspolive oil
  13. 1FOR TOPPING
  14. 3/4 cupmarinara sauce, your favorite or my recipe, listed below
  15. 1 1/2 cupshredded cheese, I used italian four cheese blend
  16. 10 sliceof pepperoni
  17. 1/4 tspitalian dry seasoning blend

Cooking Instructions

    Line a rimmed baking sheet with foil, spray foil well with non stick spray.preheat oven to 425.

    In a small skillet heat olive oil, add onion and garlic and cook gently until soft, but not brown. Cool to room temperature.

    In a large bowl combine ground chicken with all pizza base ingredients including cooled onion/garlic mixture. . Mix well but gently to combine all ingredients. Place on prepared baking sheet and form into a 10 inch circle.

    Bake 20 minutes, remove from oven.Top pizza base with marinara sauce, then cover sauce with cheese, sprinkle italian seasoning evenly over cheese, finally add pepperoni, retun to oven and bake until cheese melts, about 10 minutes more. Slice into wedges and serve.

    This makes a great lumch or light dinner. It:s also a nice appetizer cut into small wedges!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
