Ingredients

  1. 3 tbspDijon mustard
  2. 2 tbspolive oil
  3. 5 tsphoney
  4. 1/2 cupbread crumbs
  5. 1/2 cupfinely chopped walnuts
  6. 3 tspchopped parsley (fresh)
  7. 2lemons
  8. 1salt to taste
  9. 1pepper to taste
  10. 6salmon fillets (approximately 4 ounces each)

Steps

  1. 1

    Preheat oven to 400°.

  2. 2

    In a small bowl, mix together mustard, olive oil and honey.

  3. 3

    In another bowl, mix together the bread crumbs, walnuts and parsley.

  4. 4

    Season each salmon fillets with salt and pepper.

  5. 5

    Place on a baking sheet lined with parchment paper.

  6. 6

    Brush salmon with honey mustard mixture.

  7. 7

    Cover each fillet with bread crumb mixture.

  8. 8

    Bake in a preheated oven for 20 minutes, or until salmon flakes when tested with a fork.

  9. 9

    Serve garnished with lemon juice.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
