Easy cheesy Spanish rice casserole

Ingredients

6 servings

1 canCampbell's cheddar cheese soup
1 packagesLipton Spanish rice
1 1/2 lbground beef
2 cupMexican blend cheese

Cooking Instructions

15 mins

Preheat oven to 350°

Brown hamburger in large skillet.

Cook Spanish rice following the bags directions (as the hamburger is cooking).

Once the hamburger is done dump in 9x13 casserole dish and mix in the the cheddar cheese soup.

Added the finished Spanish rice on top (evenly).

Pour the shredded cheese on top spread evenly. Then baked until the cheese is melted.

This is my take on a dish I had years ago. It is not authentic Mexican, but certainly has Mexican flavors. Adding a can of corn to the soup mixture is a great idea a friend gave me. Other things you might want to add are jalapeños, black olives, and cilantro (coriander). Have fun with this one. Make it your own!!
