Lloyd's Batch Candied Bacon Lloyd's Batch Candied Bacon
This candied bacon recipe started with a conversation with Lloyd's "Uncle Al" Dombek. The conversation began with a description of Al's new maple syrup, and ended with a lot of whiskey talk. The whiskey talk ended up at a story about my favorite cocktail, a Old Fashioned made with maple syrup and candided bacon. Al delivered the maple syrup the next morning for a Blueberry Pancake Breakfast, but I was already trying to figure out how to use his maple syrup for candied bacon and an Old Fashioned. What follows is Part One. Part two will be Lloyd's Batch Old Fashioned, a fantastic cocktail featuring maple syrup and candied bacon.Travis Wasley

Applewood Smoked Buckboard Bacon Applewood Smoked Buckboard Bacon
Buckboard bacon is made from pork shoulder rather than pork belly. Early American pioneers made it often. Sometimes you will see it called pioneer bacon, or homesteader bacon, but basically we're talking about a piece of pork other than the belly, which is cured and smoked. During America’s colonial and pioneer eras, when many of our regional cuisines were in the early stages of development, salt curing was essential for preserving foods and, thus, was in high demand. To protect meat from insects and other animals during the curing process, some cultures learned to suspend it in the smoke of a fire. Although slightly changed today, this recipe demonstrates both methods of early meat preservation. King-Crimson -
California Farm Peameal Bacon California Farm Peameal Bacon
Bacon has gotten too expensive. Bacon is disappearing from the breakfast table, or being replaced with tofu bacon. However, the most expensive bacon, -a delicacy on eggs benedict-, called peameal bacon in Canada and Canadian Bacon in the United States of America, is now less expensive to make than regular bacon. You can make Canadian bacon at home. Here is the peameal bacon recipe.#GoldenApron Hobby Horseman -
California Farm Dry Cured Bacon California Farm Dry Cured Bacon
Grandfathers’ proven Recipe, we use as little salt as possible, because we cold smoke and air dry the bacon when the weather turns cool. Now that pink salt, butchers salt and other nitrate and nitrite cures are found to dissipate in eight weeks, I dry cure larger portions, air dry eight weeks in paper bags in a fruit fly proof closet. We use a pound per month for breakfast and cooking. Tastes as if fresh when fried for breakfast. Hobby Horseman -
