This recipe I kind of came up with on the fly. I use Lawrys poultry rub which does a fantastic job for seasoning chicken. I love pepper, so I'd say I used about 2 teaspoons. It is all preference.

Ingredients

  • 2 largeChicken breasts
  • 4 canSwanson chicken broth
  • 1/2 cupFresh chopped parsley
  • 1 packagesSliced carrots
  • 1/2 packagesCelery
  • 1 mediumChopped onion
  • 3 tspMinced garlic (in water)
  • 1Pepper
  • 2 tspThyme
  • 1Salt
  • 1as needed Chicken/poultry rub (seasoning)
  • 3 tbspOlive oil
  • 1/2 packagesEgg noodles

Steps

  1. 1

    Cube chicken and cook with poultry seasoning in olive oil until fully cooked.

  2. 2

    Add 4 cans of chicken broth, celery, onion, carrots and seasonings to a 5 qt pot.

  3. 3

    After chicken is done cooking, add that to 5 qt pot as well.

  4. 4

    Simmer for about 60- 90 minutes.

  5. 5

    Cook noodles as directed. Drain them and add them to soup.

  6. 6

    Serve and enjoy!
