Ingredients

  1. 1 cupsliced, fresh mushrooms
  2. 1 cupeach/chopped onions, & fresh broccoli
  3. 5eggs
  4. 2/3 cupmilk
  5. 1/4 cupchopped red pepper
  6. 1 cupshredded three cheese(Kraft has a one with a touch of Philadelphia cream cheese in it/so good in this)
  7. 1frozen deep dish pie crust (9 inch), unbaked

Cooking Instructions

    preheat oven to 375°F

  2. 2

    cook mushrooms, onions, broccoli, & peppers in a splash of olive oil, . or a skillet sprayed with cooking spray on medium heat for 5 minutes, or until tender. stirring occasionally, remove from heat

    beat eggs& milk with wire whisk until blended. stir in veggie mixture, peppers, (roast peppers 1st, or add them with the other veggies in the skillet) I prefer roasted peppers myself..

    add the cheese to that mixture, then pour into unbaked pie crust. place on a baking sheet.

  5. 5

    bake for 35 minutes. top with remaining cheese, then bake an additional 5 to 10 minutes, or until knife inserted into center comes out clean. let stand 10 minutes before serving.
