I found the idea for this from a Schwann book. I did modify it. One could add ham or other breakfast meat. This is delicious!

Ingredients

  1. 1 lbsausage, cooked
  2. 1 packagesbacon, cooked
  3. 29" deep dish unbaked pie shell
  4. 1 packagesshredded hashbrowns
  5. 10eggs
  6. 2 cuphalf and half
  7. 2 1/2 cupshredded cheddar cheese

Cooking Instructions

  1. 1

    Put hashbrowns in pie shells, enough to fill shells halfway.

    Put half of sausage and bacon (crumbled) on top of hashbrowns

  3. 3

    Put half of cheese in each pie shell. I tend to use more, use as much as you like.

    In separate bowl, beat five eggs and one cup half and half. Season with salt and pepper. Pour into one pie shell. Repeat for second pie shell.

    Place on cookie sheet to contain any spilling.

    Bake at 350°F for 45 to 60 minutes.

    These do freeze well and is why i usually make two at one time.
