Ingredients

  • 1/2 kgcarrots
  • 3-4potatoes
  • 2onions
  • 2tomatoes
  • 2green chillies
  • 2-3garlic cloves
  • 1 tbspginger paste
  • 1 tbspcumin seeds
  • 1 pinchhing
  • 1/2 tbspturmeric powder
  • 1/2 tbspred chilli powder
  • 1 tbspcoriander powder
  • 1/2 tbspgaram masala
  • 1/2 tbspdry mango powder
  • 1 tbspblack salt
  • 2 tbspchopped green coriander
  • To tastesalt
  • as neededOil

Steps

  1. 1

    Peel the carrots and potatoes and cut into slices.

  2. 2

    Chopped onions,tomatoes,green chilli and garlic.

  3. 3

    Heat oil in a wok add hing and cumin seeds and cracked add chopped onion and saute.

  4. 4

    When onion change in colour add chopped tomatoes, green chilli,garlic and ginger paste.

  5. 5

    Saute till soft the tomatoes now add all spices except garam masala and dry mango powder.

  6. 6

    Saute for 4-5 minutes add chopped carrots and potatoes,mix well.

  7. 7

    Cover and cook till soft the carrots and potatoes.

  8. 8

    Now add garam masala and dry mango powder,mix well.saute for 2 minutes.

  9. 9

    Garnish with green coriander.
