This delicious recipe was inspired by my niece who made me drool when she described such a sandwich she'd eaten while on vacation. The tangy cherry sauce can be made a day or two ahead of time and would also be a yummy topping on baked ham or pork chops! I make my own deep fried crispy onion strings for this, but you could substitute the Frenches type that come in a can.

Ingredients

  1. tangy cherry sauce
  2. 2 can(15.25 oz. each) dark sweet cherries in heavy syrup
  3. 2/3 cupred wine vinegar
  4. 4 tbspcherry preserves
  5. 1Zest & juice of 1 large lemon
  6. 1Zest & juice of 1 large orange
  7. 1 tbspbrown sugar
  8. 1 tbspcornstarch
  9. 1/3 cupblack cherry soda
  10. sandwich
  11. 4center cut boneless pork chops
  12. 1salt & pepper to taste
  13. 4sandwich buns, toasted
  14. 1Creamy cole slaw
  15. 1Crispy onion strings

    In a heavy saucepan, combine all the cherry sauce ingredients except cornstarch and soda. Bring to a low boil over medium-high heat while stirring and smashing cherries with a potato masher. Reduce heat to medium and continue cooking for 25 minutes, stirring occasionally, to reduce the liquids and concentrate the flavor.

    Mix the cornstarch with the black cherry soda. Slowly add to cherry sauce, while stirring, and continue cooking over medium heat for 5 minutes until the sauce thickens.

    Remove from heat and allow to cool for 30 minutes. Carefully pour into blender. Cover and blend until smooth. Pour into jar or bottle and refrigerate until needed, up to 2 weeks.

    If necessary, pound your pork chops so they are the same size as your sandwich buns, or slightly larger. Salt and pepper them. Grill until done. (This sandwich is also excellent substituting a crisp fried breaded pork fritter for the grilled chop.)

    Spread creamy cole slaw on the sandwich bun. Top with the grilled pork. Spread 2 tablespoons (or more if desired) of the tangy cherry sauce on top of the pork. Top with a generous portion of crispy onion strings. Add top bun and eat up! Sloppy but delicious!!

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 8 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). I'm trying to get all my favorite recipes saved here so my family and friends all have easy access to them even after I'm gone. My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.
