Ingredients

  1. 28 ounce packages cream cheese
  2. 14 ozcan sweetened condensed milk
  3. 1/4 cupfresh lemon juice
  4. 1 tspvanilla extract
  5. 1prepared graham cracker crust (9 inch)

Steps

  1. 1

    Have ingredients at room temperature.

  2. 2

    Using an electric mixer, beat cream cheese in a large bowl until smooth. Beat in condensed milk a little at a time, scraping sides of bowl as necessary. Finally, beat in lemon juice and vanilla.

    Pour the filling into crust; smooth with rubber spatula. Cover and refrigerate for 5-6 hours until firm but I find it better to refrigerate overnight.

If you add a packet of gelatin to the lemon juice before you mix it in this will set up better
