I love my Mom's cooking this was always a special dish. This particular occasion is my Dad's, oldest daughter, and youngest Granddaughters birthday. My Dad and my oldest daughter was born on the 7th of November. My youngest Granddaughter was born 6th of November. I hope you give it a try!

Ingredients

12 servings
  1. Seasonings--------------
  2. 1-1/2 teaspoonsalt
  3. 1/2 teaspooncelery salt
  4. 2 teaspoonground Hungarian paprika
  5. 1-1/2 teaspoongranulated garlic powder
  6. 2 tablespoonsWorcestershire sauce
  7. Roast--------------
  8. 6 poundbeef Butt roast
  9. 5 poundsred potatoes
  10. 2 poundscarrots
  11. 2medium onions each quarted
  12. 1 stalkcelery split and chopped
  13. Moisturizer-------------
  14. 2 cupwater
  15. 1/3 cupsoftened butter
  16. Gravy--------------
  17. 1 stickbutter
  18. 1/2 cupself-rising flour
  19. 2 cupwater
  20. 1/2 teaspoonsalt

Cooking Instructions

    Preheat oven 300 degrees Fahrenheit

  2. 2

    Wash the beef and Vegetables

  3. 3

    Add beef to the roaster

  4. 4

    Cut the potatoes, leave the peeling on potatoes and peel and chop the carrots. Split the celery and chop. Quarter both onions.

    Add the vegetables to the roaster.

  6. 6

    Add the Worcestershire sauce to top of beef and all around the sides.

  7. 7

    Coat with spices the beef and Vegetables

  8. 8

    Smother the roast with butter and add the water to the roaster.

  9. 9

    Roast in oven covered for 4-6 hours. Time depends upon how done you like beef

  10. 10

    Let rest 10 minutes

    Melt the butter add the flour to make a Roux

  12. 12

    Add 3 cup of the beef drippings and 2 cup of water and salt. Bring to boil and simmer. Stir till smooth add more liquids if needed

    Slice against the grain of the meat.
