Ingredients

  1. 1 can (20 oz)black beans rinsed and drained
  2. 1 can (15 oz)cannellini beans, rinsed and drained
  3. 1green pepper chopped
  4. 1red pepper chopped
  5. 1 packages (10 oz)frozen corn kernels
  6. 1red onion, chopped
  7. 1/2 cupolive oil
  8. 1/2 cupred wine vinegar
  9. 2 tbsplime juice
  10. 1 tbsplemon juice
  11. 1 tbspsalt
  12. 1 clovecrushed garlic
  13. 1/4 cupchopped fresh cilantro
  14. 1/2 tbspcumin
  15. 2 tbspsugar
  16. 1/2 tbspblack pepper
  17. 1/2 tspchili powder
  18. 1 dash(or more-to your liking) hot sauce

Cooking Instructions

  1. 1

    In a large bowl combine beans,bell peppers, frozen corn and red onion.

  2. 2

    In a small bowl mix together olive oil, vinegar, lemon and lime juice, sugar, salt, garlic, cilantro and cumin and black pepper and optional hot sauce.

    Pour olive oil dressing over bean and veggie mixture;mix well. Chill thoroughly and serve cold!
