Robin's Haggis Stuffed Meatloaf

I had been craving meatloaf so decided to make some. My boyfriend reminded me that it's Burns Night. So I decided to mix a bit of American with a bit of Scottish and made a haggis-stuffed meatloaf to go with the neeps and tatties :-)

I had been craving meatloaf so decided to make some. My boyfriend reminded me that it's Burns Night. So I decided to mix a bit of American with a bit of Scottish and made a haggis-stuffed meatloaf to go with the neeps and tatties :-)

Sauté onions and peppers until soft, set aside.

In a large bowl, add the bread and milk. Toss until all bread is wet. Add the beef, pork, eggs, onions, peppers, parsley, salt, pepper, and worchestershire sauce.

Using your hands, mix all ingredients together until well combined.

On a foil-lined baking tray or in a foil-lined bread pan, add half of the mixture as the base. Place the haggis in the center. Cover the haggis with the remainder of the mixture, forming a loaf.

Bake at 350°F for 45-55 minutes or until browned.

Serve with Whisky Sauce or a Peppercorn Sauce.
