Ingredients

  1. 2 1/4 lbPork Tenderloin (cut in bite size pieces)
  2. 3/4 tspSalt
  3. 6 sliceBacon
  4. 1/4 tspBlack Pepper
  5. 1 canDiced Tomatoes (28 oz)
  6. 6 cloveGarlic (minced)
  7. 1 1/2 tspDried sage
  8. 6 tbspBalsamic Vinegar
  9. 1 1/2 cupHeavy Cream
  10. 1 packagesEgg noodles (cooked)

Cooking Instructions

    Cook bacon until crisp in a skillet. Set aside.

    Sprinkle pork with salt and pepper

  3. 3

    In about 3 tablespoons of fat from the bacon cook pork until no longer pink. Set aside.

    In the same skillet over low heat cook garlic and sage for 1 minute.

    Add vinegar and cream to skillet. Bring to boil. Reduce hear and simmer 1-2 minutes.

    Add tomatoes pork, and crumbled bacon and heat through.

  7. 7

    Serve over cooked egg noodles.
