Tuscan Pork Medallions
This quick pork recipe comes together very easy. Be careful not to overheat the balsamic vinegar before you add the cream. The family asks for this recipe often.
Cooking Instructions

Cook bacon until crisp in a skillet. Set aside.

Sprinkle pork with salt and pepper
- 3
In about 3 tablespoons of fat from the bacon cook pork until no longer pink. Set aside.

In the same skillet over low heat cook garlic and sage for 1 minute.

Add vinegar and cream to skillet. Bring to boil. Reduce hear and simmer 1-2 minutes.

Add tomatoes pork, and crumbled bacon and heat through.
- 7
Serve over cooked egg noodles.
