Ingredients

1 hour 10 mins
4 servings
  • 1 lbground beef
  • 1 1/4 tspsalt
  • 1/4 tspground black pepper
  • 1egg lightly beaten
  • 10 3/4 ozcan of diced tomatoes and green chilies with juice (like Rotel)
  • 1 cupfrozen chopped bell peppers and onions (thawed and drained)
  • 1/2 cupquick-cooking oats
  • 6 slicebacon
  • 1/3 cupketchup
  • 2 tbspbrown sugar
  • 1 tbspprepared mustard

Steps

1 hour 10 mins
  1. 1

    Preheat oven to 375°F.

  2. 2

    Mix mustard, ketchup, and brown sugar in a small bowl and set aside.

  3. 3

    Mix the remaining ingredients well.

  4. 4

    Place meat mixture in baking dish and shape into a loaf.

  5. 5

    Lay bacon slices all over the meatloaf in a single layer.

    Take the ketchup mixture and spread all over the bacon wrapped meatloaf.

    Bake for 1 hour or until juices run clear.
