Stuffy Juicy Chicken

Cooking Instructions
- 1
Make sure you clean your chicken well and all ingredients above are chopped into pieces.
- 2
It's simple and quick start marinating the chicken all around add your salt and pepper and parsley.
- 3
When finished marinating squeeze some fresh lemon to the chicken . Now you can leave marinated for one whole night and cook the next day like I did or Pop it in the oven right away
- 4
Cut your lemon into slices and stuff the chicken with chopped ingredients
- 5
Make sure you pre heat your oven to 350°F let it heat up for about 5-10 mins and than Pop him right it now before putting this lovely chicken to cook make sure you poke some wholes into him so he can be nice and juices and easier to cook
- 6
It took me two hours but you have the option of leaving him in there for an hour at 350 or leave him there for one hour under 350 and than the next on 400 for a nice golden finish ... Enjoy !

This is THE BEST chicken I've made! So moist and juicy! And can be made to make things like pot pie or shredded for chicken fajitas! This is also the way I make my chicken for the White Chicken Pizza recipe I posted. Brittany Heike -

I watched a recipe from a cooking channel called New Scandinavian Cooking, and the technique grabbed my interest. So you pan-fry pieces of chicken in medium heat while adding a circular, thick stone on top of them. That way, the chicken would cook faster. I used that method (I used a thick circular marble about 20 cm in diameter) and it took about 10 minutes. The result is tasty and yummy! I modified the original recipe according to our preference. It's weekend and snowing outside. I need to do something nice to occupy my mind. And a delicious thing to occupy my belly!I wonder if I can make a perfect chicken dish: it has to be juicy, it has to absorb herbs to its deepest meat layer, and it has to be covered in broth.I know for a fact that slow cooking chicken would bring the broth out, and that the tastiest broth comes from parts with bones. So I wonder no more and start cooking. I like the combination of flavors I get with this dish. The chicken does not dry out cooked like this. This recipe is something I made up the other night. I hope you enjoy it. Jay Thomas -
