This delicious dessert is straight from the kitchen of my Nenaw, Mary Marcom. When I was a kid, we lived in Arkansas, and my Nenaw and Papa lived in Texas. So we only got to see them about twice a year. So whenever we came there, she spoiled us. This was one of the ways she did that. My mother says she remembers it as comfort food. When I decided to make it, I figured someone must have made it before, but I never found this exact recipe, so I asked Mom for it and here it is. It's really awesome. The recipe talks about whipping cream, but I cheat and use coolwhip. It also says three fourths pounds vanilla wafers, but I figure 11 ounces. is close enough, so I just said one box. I also used a little more than a cup of pineapple, and one of those little packages of chopped pecans. So it's probably more like three fourth cup. But I figure more of both is better anyway.

Ingredients

  1. 1 1/2 cupConfectioners sugar
  2. 1 stickButter
  3. 2Eggs
  4. 1/2 cupChopped pecans
  5. 1 canCrushed pineapple well drained.
  6. 1 boxVanilla wafers crushed and divided into thirds
  7. 1 1/2 cupCoolwhip

Steps

  1. 1

    Cream butter and sugar together.

  2. 2

    Beat eggs well and add to butter and sugar. Add nuts and mix well.

  3. 3

    In a 8x8x2 pan layer 1/3 of the vanilla wafers and the butter mixture.

  4. 4

    Place another layer of crumbs over the butter mixture. Add pineapple in a layer.

  5. 5

    Add remaining crumbs and cool whip.

  6. 6

    Place in refrigerator overnight.
