
Pineapple Supreme

This delicious dessert is straight from the kitchen of my Nenaw, Mary Marcom. When I was a kid, we lived in Arkansas, and my Nenaw and Papa lived in Texas. So we only got to see them about twice a year. So whenever we came there, she spoiled us. This was one of the ways she did that. My mother says she remembers it as comfort food. When I decided to make it, I figured someone must have made it before, but I never found this exact recipe, so I asked Mom for it and here it is. It's really awesome. The recipe talks about whipping cream, but I cheat and use coolwhip. It also says three fourths pounds vanilla wafers, but I figure 11 ounces. is close enough, so I just said one box. I also used a little more than a cup of pineapple, and one of those little packages of chopped pecans. So it's probably more like three fourth cup. But I figure more of both is better anyway.

Cooking Instructions

Cream butter and sugar together.

Beat eggs well and add to butter and sugar. Add nuts and mix well.

In a 8x8x2 pan layer 1/3 of the vanilla wafers and the butter mixture.

Place another layer of crumbs over the butter mixture. Add pineapple in a layer.

Add remaining crumbs and cool whip.
- 6
Place in refrigerator overnight.

For this recipe I wanted something sweet that brought a nice heat also and I already knew I wanted to include pineapple and smoked sausage. It took a few experiments before finally developing this one. I do add caramelized onions on my kids' sandwiches because I've noticed that it seems to lessen the heat some, but I like a strong heat so this recipe does not include the caramelized onions.
