Ingredients

4 servings
  1. 3chicken thighs cut into small pieces
  2. 1 tbspsoy sauce
  3. 1 tbspmirin
  4. 4 tbspflour mixed with 4 tablespoons cornflour
  5. 2eggs whisked
  6. 1/2 cupolive oil, extra virgin for frying
  7. 1Sauce
  8. 2 tbsppineapple juice
  9. 3 tbsptomatoe sauce or chutney
  10. 1 tbspmirin
  11. 1 tbspdark soy sauce
  12. 4 tbspsugar I used white but you could use brown
  13. 1 tbsppineapple juice extra mixed with 2 teaspoons of cornflour
  14. 1Vegetables
  15. 6mushrooms chopped
  16. 1 cuppumpkin cut in matchsticks boil for a few mins first.
  17. 2carrots finely chopped in matchsticks boil with the pumpkin
  18. 1onion sliced
  19. 1 canpineapple slices I then cut them into small pieces.
  20. 2peppers what ever colour you like chopped

    Marinate chicken for 3 hours if you can.

  2. 2

    Boil the pumpkin and carrot and drain.

  3. 3

    Put chicken in flour then egg and then back in flour.

  4. 4

    Make the sauce in a bowl.Keep the 1tablespoon of pineapple and the2 teaspoons of cornflour seperate at this stage.

    Fry chicken you may need to cook in 2 or 3 batches.Remove to drain on paper towels.

  6. 6

    Fry all the other vegetables you will need to add some more oil to pan.Add pineapple.

  7. 7

    Add sauce and stir then add cornflour and pineapple mixture.This will thicken sauce.

    Put chicken back in the pan.Stir the sauce it will stick to the chicken when its at the right consistency.

    Serve sraight away.Yummy crispy coating with moist tender meat inside.With sticky sweetn sour sauce.
