Ingredients

1 hour
  • 1/2 cupbutter
  • 1 cupall-purpose flour
  • 1 1/2 tspbaking powder
  • 1 cupgranulated sugar
  • 3/4 cupmilk, cream, juice from macerated peaches
  • 2 cuppeaches, peeled & sliced
  • 1 cupblue berries
  • 1/4 cupbrown sugar not packed
  • 1 tbspbourbon or dark rum
  • 1 tspvanilla extract
  • 1/2 tspeach of ginger, cinnamon & nutmeg

    Start by sprinkling the peaches with brown sugar & liquor. Toss lightly. Let macerate for about 2 hours. Longer is ok.

    Melt butter & pour into 9x13 pan.

  3. 3

    Whisk or sift together the flour, baking powder, granulated sugar & spices.

  4. 4

    Drain the peaches in a collander over a bowl.

  5. 5

    Put peach juice in a measuring cup. Add milk or cream to equal 3/4 cup. Add vanilla extract.

  6. 6

    Stir liquid into flour mixture to make batter. Pour batter into pan on top of melted butter. Do not stir. Tilt pan to spread batter.

  7. 7

    Toss peaches & blue berries together. Pour over batter. Try for even distribution. Do not stir.

  8. 8

    Bake in a preheated 350° oven for 30 minutes. Cobbler is done when top is golden brown & center does not jiggle.

Though there are mobility issues ini my life now, for years I hiked, cycled, paddled canoes & crewed on sailboats.
