Needed something quick and healthy to eat in the mornings. You can do so many different things with these, like add spinach, peppers, use different meats, etc.
Steps

Preheat oven to 450°. Place foil baking cups in a cupcake pan.

Mix together first 7 ingredients in a bowl. Pour egg mixture into foil cups until each is about 3/4 full.

Cut up ham into small pieces and evenly distribute into cups. Sprinkle cheddar cheese on top.

Bake 8-10 minutes.

Freeze leftovers to enjoy as a quick breakfast another day!
