Ingredients

  1. 1 cupleftover mashed potatoes
  2. 1 cupfrozen hash brown potatoes, thawed
  3. 2 tbspall purpose flour
  4. 4strips bacon, fried and crumbled
  5. 1/4scallions, chopped fine
  6. 2/3 cupshredded cheese, I use colby jack or cheddar, but use whatever kind you like.
  7. 1salt and pepper to taste
  8. 2eggs, slightly beaten
  9. 2 cupbread crumbs: plain, italian or panko. use whatever kind of bread crumbs you want.
  10. 1oil for frying, enough to cover fritters while deep frying.

Cooking Instructions

    Stir together both kinds of potatoes with flour. add salt and pepper to taste. Stir in bacon, cheese and scallions.

    Roll tablespoon of mixture into ball and dip in egg, then roll into breadcrumbs. Repeat with all of mixture.

    Deep fry at 350°F until brown and crispy on the outside.

    Remove from oil and place on paper towel to absorb excess oil from getting.

  5. 5

    Let cool several minutes before serving.

    Serve with ranch our honey mustard dipping sauce.

    Makes 20 fritters.

I enjoy these! I replaced the panko crumbs, with smashed,sour cream n onion potato chips crumbs!
